What's for Dinner?

So I've found out over the last few years that I really enjoy cooking. In fact, I kind of love it and I even have a knack for it.  Now, I'm no Martha Stewart or anything, but I routinely have very good luck with whatever I try out.

I don't cook a big meal every night.  In fact most nights, I just make what's easy.  With a husband, 4 kids, a house to take care of and now a new part-time job, I don't always feel like making a big deal out of meal time.  But if I plan ahead, and the kitchen is clean, I do enjoy making something special.  Tonight for instance.

I've been craving fish and vegetables for a couple of weeks now. So the other day I stopped in the grocery store  for some supplies.  I'm not at all experienced at cooking fish, so I wasn't quite sure what to get, but after consulting my mother and the guy at the seafood counter, I picked up a couple of  Tilapia fillets.  I also bought, green beans, brussels sprouts, asparagus and some rice.

The rice was a package deal, so that was easy.  The beans I just steamed (3 minutes only, that's the way my husband likes them) then added butter, salt and pepper.  The sprouts I decided to tackle another night.  The asparagus was very easy but came out sooo good.  I snapped off the ends, layed them in a bowl, added some Pinot Grigio and a few pats of butter.  Covered loosely and steamed in the microwave for 3 minutes.  Then I let it stand for about 5 minutes.  They were perfect!   Crunchy, bright green and just delicious.  For the fish, I seasoned the fillets with lemon pepper, red pepper flakes, garlic powder, and salt.  Dredged them through and egg scrambled with one tablespoon of water and tumbled through some bread crumbs, just lightly though.  Then I sauteed them in equal amounts of butter and olive oil.  Approximately 4 minutes per side until they were golden brown.  It was so easy and so good.  I was very pleased.

Now that I've cooked fish once, I will be less intimidated for the next time.  Maybe I'll try salmon, blackened, with a ceasar salad...... whoops, I'm getting hungry again.
